Shuffle beat means a triplet based galopping beat that is used in many Queen songs. Listen to Killer Queen or "Pain Is So Close To Pleasure" and you can immediately pick up the pomm-pa-pomm-pa-pomm-pa... backbeat. Mathematically explained: a quarter beat is parsed to a longer 2/3 beat and a shorter, 1/3 beat. This beat is widely used in Jazz, Swing music, and it is also a key feature of the Blues genre. It can be originated way before the Jazz-era, take for example "Marseilles".
